VACA DE DEHESA

The dehesa is the paradigmatic model of extensive Mediterranean exploitation. This ecosystem is the result of interactions by human being and animals since the Middle Ages in the Mediterranean forest, and is a good example of an ecosystem in which a wide variety of plant and animals species coexist. The dehesa is a privileged environment that has been able to maintain its integrity in times like the present, characterized by progressive loss of environmental conditions as a result of different socio-economic activities. Therefore, it is a well preserved area where the natural environment is respected by uses that these days are called “sustainable“, based on practices that have been always dictated by traditional knowledge, adapting production possibilities to the degree of exploitation.

A mix of the Retinta, Charolais and Limousine breeds, our cattle enjoy the pastures of our dehesas where they live throughout the year, feeding on grass and hay and reproducing freely. “Dehesa Cow” meat , commonly misnamed on the market as “buey“, comes from animals over eight years old. This quality gives the meat more fat infiltration and superb organoleptic attributes. These features, combined with proper maturation, yield as a product a meat with tenderness and flavor worthy of the most demanding restaurant kitchens from the gourmet universe.

Pais de Quercus es una asociación de productores y ganaderos extremeños que te llevan a casa las mejores carnes de la dehesas del suroeste de la península ibérica.

Horario: de 10:00 a 14:00 y de 16:00 a 19:00 de lunes a jueves y de 10:00 a 15:00 los viernes.

¿Por qué congelamos la carne?

Los cerdos ibéricos alimentados de bellotas y hierbas de la dehesa son sacrificados exclusivamente durante los meses de enero, febrero y marzo que es cuando termina la temporada de aprovechamiento de la bellota, tambien llamada "montanera". Durante esos tres meses País de Quercus envasa y ultracongela (-41ºC)  todas las carnes de la campaña para que puedas disfrutar de ellas durante todo el año sin que las mismas sufran ningún detrimento de calidad.
